Hungarian Goulash Soup - Light Version - Gulyásleves, light

This is my light version…
Hungarian goulash soup ingredients

For traditional goulash: 300g (10 1/2 oz) shank of beef
For traditional goulash: 500g (1 lb, 1 1/2 oz) peeled potatoes
(For vegetarian goulash: 1 kg (3 oz) peeled potatoes instead of meat)
30g (1 oz) lard (or other cooking fat, or vegetable oil, I use sunflower oil)
1 large onion, finely chopped
1/2 tsp powdered sweet Hungarian paprika (optionally 1/2 tsp hot Hungarian paprika powder instead)
Salt to taste
1/2 tsp caraway seeds
1/2 tsp marjoram (optional)
3 or 4 black peppercorns
2 med. carrot
1 med. parsnip,
1 sweet Hungarian pepper (optionally 1 small hot pepper)….
1 bay leaf
1 cloves garlic, crushed
1 bunch of parsley (optional)

My light version means: I don’t use hot paprika and hot pepper, and put less sweet paprika powder to the soup, I don’t use lard, but sunflower oil (less oil), I put more vegetables in the soup. Traditional goulash soup is rather hot, more thick and fatty.

Dumpling (galuska):

2 eggs , beaten
1 1/2 cups flour
1/2 cup water

Cube the meat (only for traditional goulash) and potatoes into 2cm (3/4 inch) pieces.
Stew the onion in lard over low heat until golden yellow (not brown).
Remove the pot from the heat, add the paprika, meat, salt and 1 1/5 liters (1 quart, 3 oz) of water.
Add the caraway seeds and peppercorns in a tea ball or small bag (for easy removal before serving)
Return to low heat and simmer.
After 30 minutes, add the carrots, garlic, leaf, parsnips and paprika peppers.
When the meat is nearly tender (around another 30 minutes), add the potatoes.
When every ingredient is tender, mix eggs, flour, water, to form a smooth batter for dumplings
Dip teaspoon in hot, boiling soup, scoop a teaspoon of batter and put in soup. It should just slide of the spoon. Keep dipping the spoon in the soup and scoop more batter until it runs out.
Cook 1 or 2 minutes or until the dumplings rise to the surface

Simple fish pie

Simple fish pie

I always intend to put more recipes on Flickr. It is a handy place to have them and to be able to share a link when talking about them. This is my fish pie. Not really original in any way but it does turn out very well. Reasonably healthy (no cream or butter) but if you are like me it tends to induce overeating. Probably should serve 5 or 6 but i can easily eat half of it.

==> Filling ingredients.
400 ml semi skimmed milk (plus 100ml water)
700g fish (mix of white fish (usually cod), smoked fish ( I tend to use smoked coley ) and salmon)
12 decent sized prawns
2 medium onions
3 bay leaves
5 whole cloves
Vegetable oil
3 desert spoons plain flour
300g frozen peas
2 hard boiled eggs quartered
Decent bunch parsley chopped

Freshly made mashed potatoes
A little cheddar

Saucepan: Heat milk and water in large pan adding the cloves and bay leaves and seasoning – bring to simmer then switch off and then cover and leave for bay to infuse for 20 minutes or so.
Frying pan: Sauté chopped onions in plenty of oil gently in a high sided frying pan until softened (the sauce is going to be made in this pan so it needs to be big enough)
Add the fish to the milk in the saucepan, and return to the heat. Bring back to simmer point and simmer for about 6 minutes.
Meanwhile to the onions in the frying pan add the flour and stir well letting the flour cook in.
Remove the fish from the pan using a slotted spoon leave aside covered. Add the milk from the sauce pan a little at a time to the onions and flour stirring continuously to make a thick sauce. Taste the sauce for seasoning and adjust as necessary. Add the frozen peas and prawns to the sauce and stir them in.
Gently break the fish in large pieces into an ovenproof pie dish. Add the quartered eggs and chopped parsley. Spoon the white sauce over and top with mashed potatoes using a fork to get a scored texture.
Place the pie dish onto a baking tray and bake for 30 minutes at 190C – Once slightly browned, grate a little cheddar on the top and return to oven for last few minutes of cooking time.
